AMAZING
1st HANWOO TENDERLOIN STEAK

This is the best steak I’ve ever had in my life... And it wasn’t a ribeye, nor a porterhouse, nor a tomahawk, nor a picanha, or anything most steak lovers say is the best cut... it was a freaking tenderloin. Fillet steak, filet mignon, whatever you want to call it. But look at the intense marbling in the second photo!!! This restaurant specialises in this cut, and it was absolutely incredible. Cooked over super intensely hot natural charcoal. Er. Ma. Gerd!!!! ❤️❤️❤️❤️
2nd HANWOO TENDERLOIN STEAK WITH UNI

This one is hanwoo (a Korean breed of cow, similar marbling to Wagyu) tenderloin, ordered with uni, because, why the hell not. A highER brow “surf and turf” if you will. The brininess of the uni (sea urchin ‘nads) is a perfect foil to the smoky, fattiness of this intensely marbled chunk of meat. This tenderloin was a bit less marbled than the other one I had, but it was insane. I only rate it lower than the plain one, because well, the plain, unadulterated one is perfection. 10/10 would still get into bed with this one again though. 😂😂😂

Again, I asked for this steak, to be enrobed in caviar, to be a little bit less marbled so that I could appreciate the ostentatious addition of caviar. 😂 It worked. Was it obnoxious? Yes. Will I do it again? Probably never. Was it a good idea? Yes. Am I ashamed? Yes. Yes I am ashamed. But yo, it was sooooooo lovingly salty, the mouthfeel was immense, and I might have peed my pants a bit. I liked it. As the song goes, “For once in my life, I have some steak that needs me... some steak I’ve needed for sooooo long~” 😍😍😍

I've always been a real lover of rump steak - so much flavour, whilst giving just enough texture to remind you that you're eating MEAT. This example was done absolutely to perfection, and the carrot jus and black garlic paste just threw it straight to the top of the list. The jerusalem artichoke added a beautiful earthy sweetness. A steakhouse might give you a big, impressive tomahawk chop grilled over charcoal, but it could never produce something this perfectly balanced as a dish. 💯💯💯💯💯

9th BUCCLEUCH ESTATE CHATEAUBRIAND FOR TWO

This steak is absolutely massive, even for a chateaubriand. Those white blocks are half sticks of butter! It was suuuuuuper tender, but wasn’t cooked with enough butter so the flavour was a weeee bit on the light side - but that’s what fillet/filet mignon is all about, eh? The texture. It did melt in my mouth, for sure. And there was plenty of peppercorn sauce and bearnaise to add sme oomph! Sometimes, this is the kind of steak that hits the spot. I kept thinking about how awesome it would be in a steak sandwich! 😂😂😂

This is brought to your table with a blazing hot stone, and you flash sear the meat on it yourself. All of the marinating and seasoning is done beforehand. The butter browns along with the steak... It's delicious! Very tender meat... Really fun, but more importantly, super delicious. Can't recommend this new place highly enough.
12th AGED SHORTHORN FLANK BEEF

Perfect flavour and seasoning - amazing with the leek and preserved beldi lemon... Cooked for 12 hours at low temp. Boom. It's a flank cut though - Don't expect it to just melt in the mouth. Give a little (chew) to get a lotta taste. 👍🏼 PS extra noteworthy because the steak jus spread out, looking like a running man 😆

I had this steak at another Flat Iron, it was one of the BEST I’ve ever had - so I ordered it at this Flat Iron, and boy, was it disappointing. A decent steak? Yes, sure - the meat itself is so tender and high quality. But the cooking of it left so much to be desired - missing the seared crust, missing seasoning, the list goes on. THIS is why you can never trust that the same dish will be good at different outposts of the same chain! 😭😭😭
