Amaretti-like cookies with a Middle Eastern twist, built on painstakingly shelled and skinned pistachios and freshly toasted cardamom. A bit of effort, but worth it for those fragrant, marzipan-soft, perfumed centers encased in the their delicate meringue shells. Eid Mubarak and Selamat Hari Raya to all who celebrate.
