ALMOND CROISSANT

I did a pastry class last year, learning to make croissant/pain au choc etc. Great fun. The instructor was talking about what to do when your croissants start to go stale and suggested that you could turn them into almond croissants! 🤨 Apparently this is a *thing* that many bakeries/hotels/cafes do - they cut the stale croissant open, put in the almond paste, dip the whole thing in a sugar syrup, a couple of flakes almonds on top and then re-bake to crisp it up. As a lover of almond croissants, I was horrified! Now I always keep an eye out for these - you can tell because they look slightly squashed and have clearly been cut open. Avoid!!
In conclusion, Pret does *not* do this, their almond croissants are lovely.
