As the table ordered assorted Tafelspitz - bits of tender cow meat boiled in broth (see the "menu diagram" previously posted but the menu actually shows a cow and all the different pieces of it with a nice little description) - the sides and accompaniments starting showing up in one fell swoop. This one is a classic Chives cream. All the sauces are homemade AND delicious.
