They hand pull the noodles to order! And you can watch the guy do it. You choose which kind of shape noodle you like, from very thin round to very wide flat. You can have them dry with stuff over them or in the delicious beef broth. There is spiciness to choose from too, but I had it as it comes as the chilli oil is on the table to add yourself. I really really liked this broth. Like it is made with love and the noodles are as good as you can imagine! 👍👍👍
