SOOT’S TAKE: I’m not crazy about fish dishes but I tried a piece and it was actually quite good with the sauce.
Poached Halibut, Charred Onion Fumet, Teardrop Onions, Fennel Pollen. The broth was a tad saltier than I’d have liked but overall, a tasty dish with very complementary flavors from each element.
