1st 清蒸笋壳鱼 STEAMED MARBLE GOBY WITH SUPERIOR SOYA SAUCE

Best dish of the evening. The fish was fresh, perfectly cooked and the accompanying soy sauce, simply divine!

Poached Halibut, Charred Onion Fumet, Teardrop Onions, Fennel Pollen. The broth was a tad saltier than I’d have liked but overall, a tasty dish with very complementary flavors from each element.
