AMAZING
1st FLOUR AND STONE’S HOT CROSS BUNS
Soots Cook Nook, Private
It’s a good Friday to enjoy these Once a Year buns. I’ve been attempting a different recipe every year and these HCBs from Flour and Stone are phenomenal.
2nd MODERN ASIAN BAKING AT HOME’S KOREAN GARLICKY CREAM CHEESE MILK BREAD BUNS
Soots Cook Nook, Private
These are da bomb! I mean, they literally look like little bombs…of flavor that is 💣🤤 They certainly bake up to their description of “crispy and crunchy on the outside and soft, luscious, and creamy [garlicky deliciousness] on the inside.” Vampires beware! 🧛 🧛‍♂️🧛‍♀️ “Heavenly” wouldn’t be an overstatement either for this newfound comfort food. How have I lived so long without experiencing these?? 😋
3rd GLOBAL BAKER’S CHOCOLATE CHIP HOT CROSS BUNS
Soots Cook Nook, Private
HCBs sans the embalming spices but with the crucifixes in place, nonetheless. If I could, I would name them chocolate ambrosia buns because chocolate and orange really are a match made in heaven!
4th BREAD AHEAD’S HOT CROSS BUNS
Soots Cook Nook, Private
The profusion of spices + citrus from these buns is unbelievable! 😋
5th BEEF HOUSE ROLLS
The Beef House Restaurant & Dinner Theatre, Covington
As warm, pillowy-soft and fragrant as I remember from years past. Perfect with house-made strawberry jam and apple butter. 🍓🍎
6th KARUIZAWA GREEN TEA 軽井沢グリーンティー
Asanoya Boulangerie, Singapore
Matcha and white chocolate dough marbled together to give a sweet matcha taste. So good! 😋
REALLY GOOD
7th NYT COOKING’S CLASSIC BAGUETTES
Soots Cook Nook, Private
Happy National French Bread Day! Incidentally, it’s also International French Baguette Day (go figure). This would be my 3rd attempt at Claire Saffitz’s baguettes. The scoring in wet dough part is a work in progress but the bread definitely tastes AMAZING.
9th NYT COOKING’S JAPANESE MILK BREAD
Soots Cook Nook, Private
Lofty, feathery white bread made from a starter called tangzhong, a warm flour-and-water paste traditionally used in China to make buns with a soft, springy texture and tiny air bubbles. This bread actually tastes like milk but it also has a nice crumb and an incredibly buttery taste considering the relatively limited butter input.
10th KING ARTHUR BAKING COMPANY’S THREE KINGS CAKE | ROSCA DE REYES
Soots Cook Nook, Private
My first bake of the year for bucket list bake club and hopefully not my last! Discovering this bread is in and of itself an epiphany. Even if it looks like a giant pineapple ring decked out for a night at the tiki bar.
11th KING ARTHUR BAKING COMPANY’S DELI-STYLE HARD ROLLS
Soots Cook Nook, Private
These certainly check the boxes for crisp outsides and light, airy insides. They’ll be perfect for some roast beef sandwiches!
13th BREAD’S CINNAMON & RAISIN TOAST BREAD
Soots Cook Nook, Private
Happy National Cinnamon Raisin Bread Day! This version from “BREAD” by Dean Brettschneider is delicious plain, so I can’t wait to try it super-thick sliced, toasted and smeared with a lashing of beurre salé.
14th WHOLE GRAIN SOURDOUGH AT HOME’S THE WONDERFULLY WHITE SPELT POPPY SEED OVAL MASTER
Soots Cook Nook, Private
The recipe is from “Whole Grain SOURDOUGH at Home” but I adapted it to my go-to method of sourdough-ing. One of few instances in recent times that I’ve gotten such a tender, easy-to-slice loaf.
15th JOSH AXLER’S SEEDED SOURDOUGH
Soots Cook Nook, Private
Kicking off Sourdough September with this wholesome sour from Josh Axler. Now, Imma go make me a sandwich
16th MOONCAKES & MILK BREAD’S HOT DOG FLOWER BUNS
Soots Cook Nook, Private
I’ve had my share of hotdog buns but never in the form of a flower! With these, I can tear off and savor each portion to satisfy my salty-sweet tooth. One weiner-filled bready petal at a time!
17th JOSH AXLER’S THE GOLDEN EGG
Soots Cook Nook, Private
Not unlike The Golden Goose that seemed to keep on giving, so did Pausa the Starter that laid the groundwork for this “golden egg” and (hopefully) many more to come! 3 years is a long time for me to keep anything alive (apart from most animals) so color me impressed with this still-in-operation zoo of yeasty beasties.
18th NEW EUROPEAN BAKING’S MALTED OAT LOAF
Soots Cook Nook, Private
Probably over-fermented and I may have overworked the dough. 😬😑 Or maybe it’s because this loaf is very nearly 100% whole-wheat? 🤔 Or all of the above? I’ll never know for sure, but this bread is delicious; and happy National Sourdough Bread Day, folks.
19th NEW EUROPEAN BAKING’S SOFT WHOLE WHEAT BREAD
Soots Cook Nook, Private
On A Whole Day For Whole Grain, I shall make myself whole with this wholly palatable version of a whole grain loaf. Enriching the dough with butter seems to impart a softer, tenderer mouthfeel to an otherwise dry, tough loaf which I have always found to be the case with traditional whole wheat bread.
20th AOMORI APPLE AND TEA BREAD 青森いんごとアールグレイ
DONQ, Singapore
BRIEF: “A sweet bread, AOMORI apple and Earl gray tea.” SOOT’S TAKE: I enjoy the pairing of Earl Grey with delicious and generous slices of apple in this roll. Would repeat.
21st NYT COOKING’S MY FAVORITE CHALLAH
Soots Cook Nook, Private
Here’s to the year 5783 and to a bunch of French toast.
23rd ARTISAN SOURDOUGH - SPIRAL ED.
Soots Cook Nook, Private
Kicking off Sourdough September with a score that reminds me either of Dr. Seuss or Tim Burton. I can’t decide which one. 🙉🌀
24th BREAD AHEAD’S BELGIAN BUNS
Soots Cook Nook, Private
Happy “Kind of Amazing to be Above Ground Day” to me! I didn’t have cake-baking energy going for me this birthday, but these retro-y buns looked pretty doable over 2 lazy days on top of sounding delicious this Afternoon Tea Week. What’s not to love about lemon-scented rolls encasing a luscious lemon curd embedded with juicy sultanas? The glacé cherry on top is literally the cherry on top of an already scrumpdillyicious roll.
25th NERD BAKER’S PANDAN PÃO DE DEUS
Soots Cook Nook, Private
Happy 57th to Singapore and to commemorate, a uniquely Singaporean creation from Nerd Baker AKA Christopher Tan: pandan and coconut-infused dough topped with a buttery, golden brown topping of toasted fresh grated coconut. True to their name, pretty heavenly fresh out of the oven. Even if they look a tad like cheesy baked taters.
26th BUTTERMILK PANTRY’S PAPPA ROTI | ROTI BOY | MEXICAN COFFEE BUNS
Soots Cook Nook, Private
“…crisp coffee cookie crust, soft fluffy bread and salty melted butter middles” is right! These are just like the ones I’ve had from the stores! But somehow it feels different eating them at home 😆
27th THE PERFECT LOAF’S SUNFLOWER AND SESAME SOURDOUGH BREAD
Soots Cook Nook, Private
A most successful bake after a long SD hiatus. Smelled amazing!
28th NYT COOKING’S LOW-KNEAD SANDWICH BREAD
Soots Cook Nook, Private
Thought I’d treat myself to some peanut butter but I needed a vehicle. So this happened. Very low maintenance and rewarding BTW.
29th BREAD AHEAD’S FOCACCIA WITH SMOKED SEA SALT & ROSEMARY
Soots Cook Nook, Private
Knocked it out of the park again with their focaccia, although I may have been a tad overzealous with the salt. 😬.
30th GLOBAL BAKER’S RED BEAN & SESAME RING
Soots Cook Nook, Private
Fun to make and enjoyed with a good cuppa Chinese tea.
