AMAZING
1st BREAD AHEAD’S HOT CROSS BUNS
Soots Cook Nook, Private
The profusion of spices + citrus from these buns is unbelievable! 😋
2nd BEEF HOUSE ROLLS
The Beef House Restaurant & Dinner Theatre, Covington
As warm, pillowy-soft and fragrant as I remember from years past. Perfect with house-made strawberry jam and apple butter. 🍓🍎
3rd KARUIZAWA GREEN TEA 軽井沢グリーンティー
Asanoya Boulangerie, Singapore
Matcha and white chocolate dough marbled together to give a sweet matcha taste. So good! 😋
REALLY GOOD
4th SOURDOUGH TURKEY
Soots Cook Nook, Private
This is all I can muster after letting Pippi go this week: A therapeutic distraction and I suppose one should be thankful for the privilege we can grant our pets of a good death? Plus, for unwittingly getting onto the sourdough bandwagon during a pandemic, a turkey sourdough for Thanksgiving this year would seem very on brand I think? 🦃
5th “BAKE THE VOTE” SOURDOUGH
Soots Cook Nook, Private
Strap in. Buckle up. We’re going on a ride...
6th MÉXICO IN MY KITCHEN’S PAN DE MUERTO
Soots Cook Nook, Private
My first attempt at Pan de Muerto. They look like middle-aged versions of their unbaked selves.
7th FOODGEEK’S PUMPKIN SOURDOUGH BREAD
Soots Cook Nook, Private
This was exciting to try with the homegrown pumpkin and I’m stoked about how it turned out! Great crumb with nuanced flavors. I particularly liked that you got a hint of cinnamon from the cinnamon stick rather than an overpowering profusion of it.
8th BROWN EYED BAKER’S ITALIAN BREAD
Soots Cook Nook, Private
For general sustenance and for a salad I’m about to make..
9th THE PRACTICAL KITCHEN’S HOMEMADE SESAME SEED BAGELS IN LESS THAN THREE HOURS
Soots Cook Nook, Private
My latest attempt at bagels since the last one with sourdough starter was a disaster. These look and taste a lot more legitimate and they’re even better toasted.
10th SOURDOUGH DISCARD BASIL INFUSED GRISSINI
Soots Cook Nook, Private
Moreish and what a great way to dispose of excess starter!
11th THE PERFECT LOAF’S SEEDED SOURDOUGH
Soots Cook Nook, Private
Studded with sesame, flax, fennel, sunflower seeds, and citrus. I love this bread sliced, toasted and then slathered on with Laughing Cow cheese spread (a guilty pleasure of mine that I treat myself to occasionally). The whole affair is nutty and wholesome without the heaviness.
12th FRIED MANTOUS 炸馒头
Mellben Seafood, Singapore
To mop up that creamy buttery sauce.
13th NO-KNEAD SOURDOUGH #6
Soots Cook Nook, Private
My best loaf to date after the epic fails that have been frisbee loaves #1 & 5.
14th KEVAN ROBERTS’ CHERRY & CHOCOLATE SOURDOUGH
Soots Cook Nook, Private
By far my most rewarding sourdough bake. Letting it proof 12 h @ 26 C was well worth the risk, even if it meant napping at 30 min intervals overnight to monitor this time bomb! Forget pain barrier, it’s the “fear of over-proofing” barrier I’ve had to overcome all this time! I was a tad ambivalent about adding fennel but I’m so glad I took the plunge because it took already excellent bread to a whole other dimension with its very pleasant aniseed-y undertone .
15th SPRING ONION, HERB & GARLIC BRIE SOURDOUGH
Soots Cook Nook, Private
Well, we don’t have big-ass green onions here, so this deconstructed version will have to do. 😋
16th BREAD AHEAD’S CHEESE & OLIVE STICKS
Soots Cook Nook, Private
It may look like these bread sticks just threw up on their tray, but they’re absolutely scrumptious!
17th NYT COOKING’S CINNAMON RAISIN SWIRL BREAD
Soots Cook Nook, Private
Takes about 1/6 the amount of time it takes to produce a sourdough loaf: If you count the 3 extra days it takes to reactivate Pausa 😉
18th TURKISH FLAT BREAD | BAZLAMA
Soots Cook Nook, Private
As delicious and pillowy soft as the recipe describes this bread! Perfect with the moutabbal and hummus tehina I’d also made.
19th BREAD AHEAD’S GRISSINI
Soots Cook Nook, Private
These taste nothing like the grissini I’ve had in ristoranti and by that I mean these are the best ones I’ve EVER friggin’ had! I mean, these are moreishly bready whereas the ones I’ve had have been more like tasteless (or worse, rancid) crackers. Mille grazie @breadaheadbakery! Perfect with Zahav’s hummus!
20th SOURDOUGH LOAF #3
Soots Cook Nook, Private
3rd attempt at sourdough bread making, this time with improved texture and taste relative to attempt #2, although scoring was worse.
21st POLISH BREAD ROLLS
Soots Cook Nook, Private
From Bread Ahead’s piekarz kanapka tutorial.
22nd INAUGURAL SOURDOUGH LOAF
Soots Cook Nook, Private
My very first sourdough loaf borne out of a starter that came into being a week ago, courtesy of the Sourdough Hotel. It’s not the prettiest (for lack of equipment and experience), but damn was it tasty! I’ve not had decent sourdough like this since college. Well done, @breadahead.
24th FRENCH COUNTRY BREAD
Soots Cook Nook, Private
Because... 1. Leftovers in fridge. 2. I‘ve run out of 🍞 3. I don’t feel like running out to buy 🍞 that tastes like cotton wadding.
25th PARKER HOUSE ROLLS
Soots Cook Nook, Private
Soft, sweet, buttery and folded over.
27th CRUSTY WHITE SANDWICH LOAF
Soots Cook Nook, Private
It was crusty alright. Took a combination of blunt & sharp forces to slice.
28th AUNT MELISSA’S GRANOLA BREAD
Soots Cook Nook, Private
Made granola bread using the granola I made day before. Lovely with a pat of butter and a sprinkle of Maldon.
29th BREAD BASKET
Tancat, AAG
I love that you get warm bread that almost always comes with a tasty dip unique to the restaurant. I had no idea what the dip was in this case but it was a welcome reprieve after a long day out.
30th ORANGE FANTAN
Simply Bread Cluny Court, Singapore
Today, I discovered fantan. It was soft, buttery, fragrant, not too sweet and with just a hint of orange 🍊 This was really lovely.
