SALTED CARAMEL ÉCLAIR WITH TARRAGON SORBET

Stunning. The sorbet was so smooth and creamy that it tasted more like an ice cream, flavours perfectly balanced between sweet and savoury. The éclair was equally gorgeously balanced, the dark chocolate marrying with the salted caramel and little bits of rhubarb. If you had only the éclair in a bit you'd think it was on the dry side to texture but with all the other bits in place everything came together and it was welcomed. A stunner end to a taster dinner.
