DIVER SCALLOP CRUDO

A new discovery for me. I never had scallops served this way. Thick, meaty scallops sliced about a 1/4 inch with cucumber, radish, peppers and a tiny sprinkle of sea salt. The roasted pineapple was delicious, but I think too strong and overpowered the other flavors. I'd do without the salt as well. I appreciate the layers of flavors and texture.
