Chargrilled in banana leaf, with urap urap salad and roasted garlic rice. Pepes is an Indonesian cooking method where the ingredients and spices are wrapped in banana leaves and grilled over charcoal. The rempah (spice paste) was perfectly executed with just the right amount of spiciness (for me) and a delightful whiff of kaffir lime. Pity I forgot to take a picture of the unwrapped package to showcase the cod fish. A dish not to be missed here (the other being the suckling pig) #MichelinPlate
