The smokiest, tenderest, most perfectly seasoned morsel of A5 japanese wagyu, slightly given aburi (torched) treatment, topped with fresh black truffle (think triple the thickness of a normal shaving!) and caviar (ossetra). Served on a small pillow of just the right number of rice grains, vinegared and sugared just perfectly. Could this combination ever be bad? No, never. 😋 But to create MAGIC like this is something else!! It’s not every day that truffle is served thick enough to be a chip/crisp, but holy schnikes the texture is amazing. Note to self: have thick shaved truffle more often 🤪🤣🤪🤣 It kinda looks like otoro fatty tuna belly - but it was actually softer and more mouth-melty. Lord. I’m rambling now because just thinking about it makes me all wobbly and sloppy. I’ll stop here... 😂
