Engawa is the frilly flesh/muscle on the fin-edges of flatfish such as flounder.
At Yuzen, it receives aburi treatment, slightly blowtorched on just the edges, and explodes in yiur mouth with a slightly oily, soft, magical flavour.
The best nigiri of 2018 for me!!
