Holy mother of... the Pasta God!! 😂😂😂 This is a three egg yolk, straight-up proper Carbonara made with GUANCIALE (cured pork cheek) instead of the more common (but incorrect) pancetta. And my, is it truly amazing. Firm spaghettoni, with pecorino romano cheese (instead of parmesan... again, more common but incorrect) and combined with skilled technique and know-how... and the rest is history. The best Carbonara in all of London. 💯💯💯
