PAN-FRIED TROUT WITH SPELT RISOTTO

Spelt risotto is an interesting variation, as it is much less rich and not really very creamy. But it works nicely with the fried local trout fillet, pea puree and vegetables. However, the whole plate needed salt and a good squeeze of lemon to bring it to life.
