NYT COOKING’S VODKA SAUCE TOMATO SOUP + GRILLED CHEESE

This may be the most tomatoey soup I’ve ever had, thanks to layer upon layer of tomato flavor: roasted vine-ripened Amoroso tomatoes, canned Puglian tomatoes, and double-concentrated tomato paste that deepens the whole affair even further. Then comes the vodka sauce treatment, enriching the soup with more than a splash of cream while minced Calabrian chiles bring just enough heat to keep things lively.
It’s a tomato soup for the ages—at least until another one comes along and knocks my socks off—and the perfect partner for my grilled cheese of soft milk bread and melty Jack cheese.
