This bowl of noodles comes with a runny egg, fried ikan bilis (anchovies), minced pork and fried shallots. Scoop as much or as little of the dried chilli mixture that’s available on every table as you like and mix everything up thoroughly. Go easy and add the chilli gradually because that stuff is potent.
