Happy National Granola Bar Day as I try to salvage whatever look remotely like bars from today’s attempt. The whole thing appeared deceptively compact, resembling a giant bird suet cake until I began slicing. However, much of the slab fell apart, resulting in what looked like a war zone of granola clumpsualties, something the recipe seemed to pride itself on not producing. Perhaps it had to do with the fact that I substituted craisins for half the amount of dried apricots the recipe called for in the binding agent because I only had so many Turkish apricots on hand. Or perhaps I should’ve pressed the mixture more firmly into the baking pan before baking? I may never know…🤷🏻♀️
