…which I meant to eat and post yesterday but couldn’t because I hadn’t accounted for the cooling time required for such a baked good (sorry mom)! Anyway, there is an interesting history behind this confection, inspired by the cherry and ricotta tarts sold at Boccione — the oldest surviving bakery in Rome’s Jewish quarter. The story goes that in the 18th century, a papal decree forbade Jewish people from selling dairy products. Resistance came in the form of topping ricotta cherry cheesecakes with a layer of dough in order for them to be sold without suspicion — thus Crostata di ricotta e visciole was born 🍒
