The prep intensifies the flavor of the just crunchy enough broccoli. Topped with crunchy cashews. I only found the delicious eggplant cream at the bottom, so I didn’t get the opportunity to mix it with most of the dish. It was so good when I mixed it with the remainder of the broccoli. I wish I had known sooner that it was there!
