AMAZING
1st SPICY BIG BOY

Just go all in with a fully stacked, large ramen bowl with soft poached and conventional tamago, chasu pork, nori, spicy miso pork mince, mushroom, beansprouts, scallions, and pickled ginger, in a spicy broth. Amazing! šŸœ
2nd MISO RAMEN
Ramen Shingen, Sapporo
Big bowl and bigger queues! But it's worth the wait. Noodles were chewy, broth was a potent savoury miso packed with umami and the pork was divinely tender. Only criticism is the egg which is not soft boiled nor marinaded. Not worth the additional cost, but the Hokkaido corn I added was sweet and definitely worth it.
3rd GYOKAI BLACK

Superb bowl of a soy-based pork broth (carrying a hint of fish as well) with heavy emphasis on their own Kogashi charred black garlic oil. Chashu pork belly was tender, noodles were thin and firm and I'm glad to see a whole Nitamago egg included rather than a half. Excellent bowl and authentic flavours.

Superb, incredibly fragrant, truffle infused ramen with extra umami inducing porcini mushroom paste to kick it up another notch.

5th BLACK TRUFFLE RAMEN

Excellent pre-flight food at Jewel near Changi T1. Truffle was strong but not overpowering, the broth was clean but still deep in flavour and the pork was tender and sliced nice and thin. My only two criticisms: 1) add-ins are costly as it comes with very little in the standard bowl; 2) was not given option on noodle chewiness - mine were not as chewy as I'd like.

Scorched soy combined with dashi for a light ever so slightly sweet yet intense broth. Noodles were light and wavy but it skimped on pork and a few other trimmings

This is a limited edition, miso paitan. A Tokyo-style ramen bowl with chewy, wavy noodles, it's here over the next month or so. The broth is rich, savoury and basically a comforting hug in soup form. Every slurp is satisfying. šŸ˜‹ Textures are good, with sweetcorn and sugar snap peas providing a complementing sweetness too. Pork was soft though I'd have liked a larger trio of slices. Well worth a sample if it's still on.

Excellent shoyu ramen with whole egg. Not too rich with perfectly cooked (for me) chewy noodles.
11th BAKAMORI KARAAGE RAMEN

Bakamori translates as "more everything" and is a fitting description. This was spicy (atomic breath hot as per their menu) with double noods, double chicken karaage and way too many bean sprouts. Inadvisable to finish it solo like I did. Could barely move afterwards šŸ˜‚

Layered broth intended to be eaten as top and bottom. Couldn't detect a massive difference personally but it was tasty nonetheless šŸ˜‹

The signature Tonkotsu - a creamy pork broth made of a fatty and devilish lardo and sea salt base, with roast pork belly, bamboo shoots, beansprouts, spring onion, burnt garlic oil and seasoned tamago.

Black garlic oil is the emphasis of this chashu broth ramen. Chose 'regular' broth but 'rich' is also an option if you're indulging.
21st PORK TRIO RAMEN

Tonkontsu ramen bowl with chashu, crispy roast pork belly and sweet cured bacon comprising the trio. Egg was not tea-marinded and the noodles a bit too soft for my liking, but it was a decent bowl. šŸœ

Noodles not firm enough and the broth, while tasty, lacked the richness I like in a ramen bowl. Felt like a Chinese/fusion noodle bowl more than a ramen.
