Kurdish-Syrian specialty, packing juicy brisket, slow-braised in a smokey beer, into a fresh boat of bread fresh from their taboon oven. Also in there are potatoes, onion and chimichurri. Soooooo good!
Beef tongue filling, cooked with whole cloves of garlic and preserved lemon, absolutely fills the bread on top of the potato, onion and chimichurri core. Fantastic specialty bakes!
Kudbari is a wheel of bread, stuffed with a range of fillings. This was a beef variant. Not my favourite dish here, but when considering the khachapuri and khinkali staples are what you turn up for, it's hardly a surprise.
