1st ROAST ORGANIC CHICKEN LEMON HONEY MUSTARD

The mustard was punchy and unique, possibly due to the addition of what tasted like fennel leaf.

BRIEF: “Our signature El Jannah 1/2 Chicken Plate. One half of our legendary charcoal chook-of-choice, served with our medium famous garlic sauce, mixed pickles and fresh, warm Lebanese bread.” SOOT’S TAKE: An appetizing & satisfying meal but it really only works with the toum.

The best roast chicken I’ve been able to produce so far. Buttermilk appears to be the secret sauce to a tender, juicy, appropriately-salted roast chicken. Went great with chimichurri.

My pantry find this weekend was an unopened tub of gochujang that’d been stagnating in the fridge for god knows how long. Hence, this super-tender, slow-roast chicken + close to being confited baby potatoes bathed in sauce of schmaltz and funky, spicy gochujang.
