The marriage of fresh pineapple and Waugh's curry powder result in this very flavorful dish. It's been a while since I had mom's pineapple rice, and I have Queen E to thank (with her Tom Yum soup mix begging to be used) for inspiring its reappearance at the dinner table.

And maybe the only cooking involved points to the steaming of rice and dry-frying the dried sea creatures? First time making Persian Jeweled Rice (and there wasn’t even a wedding!). Substituted barberries for cranberries, and for that reason alone, it might not pass muster for authentic Iranian cuisine. Anyway, highlights of this dish include the golden, glistening, crusty layer of rice at the bottom (in fact, the best part, and thanks to being laced with butter), the spiciness of the rice derived from cinnamon, cardamon, cumin, allspice, the natural sweetness of gem-colored fruit from cranberries, golden raisins and apricots, and nuttiness from toasted almonds and pistachios.

My first time trying this dish. It reminds me of a giant tamale except instead of masa it’s rice steamed in what I believe to be spiced coconut milk and there’s a gigantic chicken drumstick wrapped inside the rice which is in turn enveloped by the banana leaf. I like every element of this dish except the curry which I’m less a fan of.
