REALLY GOOD
1st SAMI TAMIMI’S MA’CARONEH BIL LABAN

Pasta with yoghurt and parsley breadcrumbs is my first attempt at a Sami Tamimi recipe and it’s pretty fuss-free. I was a tad skeptical about the use of yoghurt and egg yolks as the base for the pasta sauce, but all the (other) elements in this dish complemented one another so exquisitely that I couldn’t help but be amazed. This is inspired by one of Tamimi’s mom’s pasta staples whom I suppose I should be grateful to for indirectly birthing this dish. Mighty glad I chose to prepare this on my birthday.
3rd MIDNIGHT PASTA WITH ROASTED GARLIC, OLIVE OIL AND CHILE

Is it midday pasta since I had it around noon 🕛 or midnight pasta since I roasted the garlic at midnight ~ 12 hrs prior, so that it would only take under 20 minutes to do the rest at lunch time? 😳
5th PASTA AGLIO E OLIO INSPIRED BY CHEF

Slicing an entire head of garlic with a mandolin nearly got ugly, but no worries ultimately, on that count. Clearly I have some ways to go wrt plating pasta (no carving fork). But damn, this was delicious!

Motivated by the need to dispose of a bunch of basil, leftover Edam from the lángos, an open bag of pasta and a lonely “shitty” croissant (rolled by yours truly) in the freezer, this dish happened.
13th MEATLESS “MEAT” SAUCE WITH CHICKPEAS AND MUSHROOMS (ACCIDENTAL VERSION)

First time making vegan pasta. The texture of the sauce was meat-like thanks to the addition of pulsed chickpeas. I inadvertently used canola oil instead of EVOO so maybe that’s why it felt like the sauce lacked depth of flavor? Will have to try it again with with EVOO next time. Enough to tide me through the week!
14th SPAGHETTI IN TOMATO SAUCE WITH BUTTER & ONION

Attempted Marcella Hazan’s famous tomato sauce and she wasn’t kidding with her “Simple doesn’t mean easy,” quote. You have to watch the sauce closely as it simmers for 45 minutes because I burned the first batch (that’s right, the one you’re looking at came from a second batch I had to begin from scratch). 1.5 hours of cooking over the stove ain’t easy. 😓🍅🍅

19th CARAMELIZED SHALLOT PASTA

I really wanted to like this and the shallots & garlic smelled amazing during the 20 min cook-down, but the shallot jam was ultimately overwhelmed by the anchovies. The dish was incredibly salty 😣 although you started getting slightly used to it after a few mouthfuls. I will try again next time sans the anchovies. Or maybe just 1 fillet. If I can find better quality ones.
