Happy National Grilled Cheese Sandwich Day! Guess what I did with leftover ham, triple cream brie, membrillo and seeded sourdough?

On freshly baked seeded sourdough. Did I really make a sage butter just to toast these grilled cheese sandwiches in? Yes I did.

An entire pint’s worth of painstakingly sliced, herbed cremini shrooms piled high atop toasted homemade soft whole wheat sourdough coated with a schmear of Dijon-rich bechamel; and to top it all off, a shower of Comte melted and grilled to perfection. Enjoyed over 10 precious minutes to self with a glass of chilled rosé as I take time to live a little.
