Solid and appropriately flaky croissant generously filled with a lovely matcha frangipane. It was very good but also too filling for a single serving.

Pros: delicious almond cream & crunchy almond slices Con: a better croissant than any of the ones I’ve made but not particularly shatter-y (is that a word)? The ears weren’t particularly crispy either.

My first attempt at medialunas. Or croissants for that matter, and these were the closest I could get them to look like their Argentine cousins (topped off with almibar). They’re breadier than I’d like but deliciously buttery and crispy on the outside, fresh out of the oven. They’re also not the prettiest, but hey, it was my first time.

It looks less gummy than Trial #1 (at the very least, the crumb has some semblance to that of commercial bread)! But clearly, I have a long way to go in mastering the art of laminating yeasted dough. 💪🥐
