AMAZING
1st MEYER LEMON CROISSANT

Brief: “A CELEBRATION OF LEMON! A CROISSANT STUFFED WITH PIQUANT MEYER LEMON CURD AND FINISHED WITH A GLAZE MADE FROM ITS ZEST FO A BRIGHT TREAT.” Sooty’s Take: the best croissant I’ve had in recent memory and maybe even the best ever! The croissant itself was flaky and crunchy (none of that disappointing sogginess I find in 99% of the croissants I’ve had) and the lemon curd was deliciously bright! 😋

Pros: delicious almond cream & crunchy almond slices Con: a better croissant than any of the ones I’ve made but not particularly shatter-y (is that a word)? The ears weren’t particularly crispy either.

My first attempt at medialunas. Or croissants for that matter, and these were the closest I could get them to look like their Argentine cousins (topped off with almibar). They’re breadier than I’d like but deliciously buttery and crispy on the outside, fresh out of the oven. They’re also not the prettiest, but hey, it was my first time.
