Love the mild, garlicky flavor and creamy texture of this dish. I sprinkled dried basil I had on hand and Hawaiian red salt over the slices before roasting, then drizzled with golden balsamic vinegar post-oven. The stuffing of garlic into eggplant part of it takes practice but it’s still a very doable dish that manages to also be tasty!

A more contemporary riff on Queen E’s coronation dish, although I missed the crowning (the one in 1953 and the one that just happened); but that was never really the point anyway. At any rate, a flavorful eggplant dish despite my ill-considered attempt to salt the eggplant before marinating.
