AMAZING
1st DANUBE SALMON IN PARSLEY BROTH, BLACK OLIVES AND SORREL
Esszimmer, Salzburg
It goes without saying that this delicious European (local) fish was cooked to flaky perfection so let's move on to all the other fantastic elements on the plate. The citrus, parsley and sprouts brought a welcome high note to the plate (complimented perfectly by the 2012 Gruner Veltliner Feuerberg, Seher, Weinviertel) while the olives and sorrel just rounded the whole experience.
2nd WILD SALMON WITH MUSTARD ONION, CRESS AND TARRAGON BUTTER
Esszimmer, Salzburg
Course two came flying out of the kitchen - and wowed us thoroughly. A perfectly 'lightly pickled' piece of fish with a sumptuous texture inside and out with a course mustard crust on top (giving a crunch that set the whole dish off), nestled on a bed of onion mash. Absolutely amazing - and a perfect end to the fish portion of this menu.

Pan seared with shiitake ginger brandy cream on grain. Flaky tasty beautiful.
4th POACHED SALMON
ROBINSON Club Esquinzo Playa, Esquinzo
For every meal a healthy option was available as well. this one impressed Mr. Carastian quite a bit. Salmon poached to perfection, served on a bed of steamed cucumbers with a balanced gingery/ chili note. a dollop of sour cream. what a great little dish. Sorry for the crap shot.
5th LOMI LOMI SALMON

A fresh salad of raw salmon, salt, tomatoes, onion and hot peppers. The name reflects the method of preparation, where the ingredients are gently massaged into the salmon. Just like the lomi lomi massage you see at the spa!

Mr. Carastian's choice. a wonderful mix of Salad greens with a piece of non- farmed salmon, grilled to perfection.
7th PICCATA SALMON AND CHIEMGAU RISOTTO

Mrs. C was intrigued... piccata style fish? I'm in! Especially organic lovely wild salmon, all lightly breaded and perfectly pink inside. Not to mention the lovely barley risotto with locally sourced mushrooms and veggies. A lovely light dish for lunch!
8th SALMON IN VERMOUTH

back in the old dignified great dining hall of Harry Potter - no not Potter (though it looks it and was filmed there too (Partially) - more like Harry Prince of Wales (I reckon). Being back in the Corpus Christi College and having the privilege to dine in this historic place. Found in 1517 one really feels the the place. That makes up for the dish that was ok - not more but not less. flaky good fish, that could have done better without the sauce.
9th SALMON ON CURRY LENTILS WITH ASPARAGUS

A beauty in this great, high quality Bavarian Restaurant. Pan fried Salmon filet, served on a bed of lentils, some creamy curry sauce and asparagus. A tasty dish! the only flaw, if you have to find one, is the cumin seeds that were found in the lentils.
10th SALMON TROUT WITH THYME-HORSERADISH CRUST ON COUSCOUS

Not a typical hot summer's night dish but WOW. Perfectly moist and tender salmon (the portion size was a nice surprise for the 14,50 price tag) on top of a tasty bed of couscous with summer veggies in it and a creamy vermouth sauce on top. Sooo tasty. I could have used more of the sauce since I was greedy and dipped my fish in it like crazy and didn't have enough to go with all that couscous.

11th PAN SEARED SALMON
Jesus College, Oxford
with wilted spinach, dill beurre blanc and parsley baby potatotes. The Fish was done to perfection, juicy on the inside and a fine crisp skin on the outside. WOWser.

12th NORWEGIAN WILD SALMON WITH WASABI CRUST

Now this dish was cooked well, but one couldn't help but to feel like perhaps these were basic 'frozen fish pieces' that were bought at Aldi. The wasabie "crust' was really more like a smear of some very mild wasabi tinted goo. Such a shame, really. They tried to be inventive but it was another epic FAIL. The strangest thing was how the restaurant was packed and everyone else seemed really pleased with the food. Mayhaps our fellow townfolk have lower expectations than us, or maybe we are too critical. But we won't be going back.
