From our local restaurant Lindner's (American executive chef - all organic ingredients, yada yada yada) we have this delicate parfait of liver with a lovely fall inspired chutney, celery root slaw with pineapple and the most amazing strip of sweet crackling candy. The balance was perfect - creamy, rich parfait and the tart chutney complimenting the sweet slaw. Then you hit that crispy strip of pork goodness and it was GAME ON! Second course down. Cue the harp music (they literally had a harpist on hand to amuse the lucky 100 participants).
