Amazing ham and cheese croquettes

Just sublime. I have no idea how it's so soft inside, like mousse, but so crispy on the outside. But it's perfect.

Small but perfectly formed and so tasty. 2 per serving but you can easily eat a whole plateful

Tender braised meat from a pig's head in a a delightful croquette, served with a savoury and sweet bacon jam and parsley mayo. Wonderful starter.
