Hard to go wrong with toasted sourdough and warm burst tomatoes over schmear, and what a great way to get rid of leftover mascarpone!

100% vegan lunch. The gazpacho is the best I’ve had so far although I’ve only had this Spanish cooler about once or twice in my life. It’s clean, refreshing and definitely not the insipid experience I probably associated with the one(s) I’d had. Glad I didn’t completely write off this soup/drink(?), due in part to @carmagal ‘s post of said gazpacho. May spike with a splash of vodka next time 😜

No kidding about the short cut in lunch.

Shallots and shrooms sauteed in butter, with a splash of Lil’ Rascal Pinot Gris, a glug of cream and then spread over buttered pieces of brioche toast sprinkled with chives.

First time having their peanut butter on multigrain. Love it!

Too dry and the bread needed more toasting.
