BRIEF: “Selected black pork fried by professional chefs. Since Chef Fei created the dish, every serving of fried pork with chili sauce is freshly fried.” SOOT’S TAKE: This was the best dish and we made that clear when chef (probably not Chef Fei) emerged from the kitchen and asked which was the best dish among what we ordered. It is no wonder they’ve been Changsha’s #1 must-eat dish every year since 2021. So damn good! 😋

Looks basic but flavorful and clean-tasting. It may be a restaurant chain and we actually had this at their Hangzhou chain in a mall near West Lake (西湖) rather than the one listed (because I couldn’t find the actual outlet on Eaten) but they really excel at stir fries.

BRIEF: “Yummy and go well with rice.” SOOT’S TAKE: Tasty. I like the combination of thin-sliced iberico with white fungus.

Reunion dinner side I fried up from “REVOLUTIONARY CHINESE COOKBOOK” for some variety in an otherwise mundane hotpot dinner. I used Chinese screw peppers.
