Ginger cake soaked in sake and thyme syrup. This was lovely (not overpowering) and it paired very well with the accompanying coconut coffee which tasted like a light roast and (believe it or not), which I actually liked!

Sawara aged 6 days to intensify its flavor and grilled over coals. Served with kaffir lime salt and pickled myoga (which is supposed to be similar to torch ginger). The fish was perfectly cooked but I’m not sure I got much out of the salt and the pickle.
