Followed Malcolm Lee’s take on otah, a dish of spicy steamed or grilled fish paste. If I was being true to his version, it’d be “delicate and luxurious, compared to the fierce street variety.” Let’s just say this was fiercer and more street because I used dory (instead of cod) and the arbol chiles I inadvertently used for the spice paste more than cleared my sinuses. 🥵
