Smoked Bacon, Fried Sage

Finally got rid of the leftover roasted butternut squash that’d been sitting too long in the freezer. They became these delicious, crispy, buttery, nutty, gnocchi.

Served with spinach, asparagus, mushroom and Parmesan in cream sauce.

First gnocchi in Argentina and it was very good.

Spinach gnocchi. Still among the best gnocchi I’ve had.

Pumpkin gnocchi swirled in brown butter and paired with Manchego shavings — a golden little ode to pumpkin season. 🍂 Happy National Pumpkin Day!

In a garlicky tomato basil sauce. Too doughy for my liking. The butternut mascarpone version was much preferred.
