It’s National Curried Chicken Day and I was hopeful for a rich and full-flavored curry. Alas, this Chicken Tikka Masala lacked depth of flavor. Perhaps it was because I neglected to strain in the cooking juices from grilling the chicken? Or perhaps I need to start making my own garam masala instead of lazily relying on a store-bought, rarely used jar? Maybe it needs a night in the fridge? Maybe it’s all of the above? Or none of the above? 🤷🏻‍♀️
