BRIEF: “Thinly sliced beef simmered in a sweet soy-based sauce.” SOOT’S TAKE: My first time trying bulgogi in soup form. While it retains the familiar sweet-savory profile of its stir-fried cousin, this version feels gentler and more refined, with the leeks taking on a more prominent role. A heartier, more wholesome rendition of a dish I’ve only ever had stir-fried before.
