With Creamed Corn, Green & Cannellini Beans, Herb Butter. The salmon was meltingly tender, sweet & moist. Sigh.

Wild PNW salmon, marinated roof squash, cherry tomatoes, Israeli couscous; sumac vinaigrette with roof basil aioli. The salmon was rich, sweet & so tender! I loved the roof basil aioli, too. The tomatoes were sweet & popped when you took a bite. The couscous was done al dente, which I liked, but it was too spicy for me. I couldn’t finish it.

The salmon middle was done just right: a nice pink. On the whole the it was tender & flakey. The horseradish vinaigrette was so flavorful & smooth. It made the dish! The lentils with veggies had a nice texture..
