This bagel is so light ! It’s satisfyingly crispy when you bite into it with a myriad of toasted sesame seeds. The scrambled eggs are fluffy & tasty. The lox adds a salty sweet richness. It is close to amazing, especially for scrambled eggs on a bagel! Oh and the photo shows only half of it!
2nd SCRAMBLED EGG WITH CHIVE FLOWER

Secret: I made this dish, but with green market ingredients. I was so taken with the chive flowers, I had to share. They lend a very subtle chive flavor. The eggs were tender-ish and the floral salt & fruity Kampot pepper purchased from #177MilkStreet, add a touch of floral & fruity flavors. The green market sauteed spring onions were great scrambled with the eggs. I had it with #Amy’s Bread whole grain sourdough & a pillowy onion potato roll. #PartnersCoffee came out light & flavorful with my geeky pourover equipment.

Fluffy heirloom Country Hen egg made creamy by the addition of soft avocado. The plump salmon roe on top added little bursts of salty salmon goodness. Made even richer by the side of Toasted Irish Soda Bread.
