Crunchy chewy carmelized outside with a most, dense, springy maybe with lemon &/or vanilla notes inside. Best canelé, hands down!! They make them right there!

Good caramelized outside & amazingly soft, moist, mildly sweet, custardy inside. The only drawback from perfection was the lack of crispness on the outside. Still it was dreamy.

Moist inside & out with a fine coat of tiny crunchy sugar crystals or maybe that was the caramelization. Subtly flavored. A very fine canelé by Patisserie Vanessa in Harlem.

Pretty close to perfect! Dark& chewy outside, although I prefer crunchy. Springy, moist vanilla rum cake inside.

The caramelized crust was compellingly crunchy! The soft custard interior with hints of vanilla & rum was very good. My only disappointment was that the custard only filled part of the inside, leaving a big air pocket. I definitely preferred the traditional one over the darker one made with rye flour. I can’t remember how the flavor compared with my favorite canele at Courier Coffee in Portland, but I don’t think any canele can be better than that one!

I thought I took a picture of it when whole! At least I got the inside. Nice & eggy inside with a mildly spicy undertone. Unfortunately i discovered it in my tote the day after I bought it (!), so I can’t judge whether the exterior was originally as crispy & carmelly as I like it. I’ll try again another day. Still, all in all, very good!

Very good! The insides were moist, springy & tasted of vanilla. The outside was a little too tough, not crisp enough & didn't have the same amazing caramel flavor that the canelé from Courier Coffee in Portland did. (I'm on a bit of a quest to see if I can find a canelé in NYC equal in quality to the one at Courier Coffee in Portland Oregon.)

It was good, but the outside was too chewy, maybe due to the humidity. The inside was moist & pleasant, with a perhaps vanilla flavor. It was larger than others I’ve had. It is not the best, which was from Portland, Oregon (posted).
