Why is this restaurant soooo amazing?! This dish includes two of my fave ingredients - atrina pectinata scallops, and chinese chives. Pure heaven. There is something religious about this dish. Spiritual experience.

Incredible flavour... The bloody mary jelly is bloody delicious! Zesty, tangy accompaniment to the natural oiliness of the fresh sea trout.
