Rempapa, SingaporePounded buah keluak cooked with rempah titek minced pork and coconut. This sambal was deep and complex in flavour. A little bit savoury, a little bit sweet, a little bit sour, a little bit earthy… it was a dish that made some of us eat more rice than we would usually do. A definite rice thief.
