1st LAMB SHOULDER
The Glass Goose, AucklandThe lamb was properly crisp on the outside and juicy on the inside. Cooked perfectly. The salsa verde on top is better described as a garlic bomb that added wonderful aromatics and umami to the lamb. The underlying white bean crema was nice, acting solely as a creamy foil to the rest of the plate. The green beans also added nice diversity to the plate, both in terms of color and in texture with their nice snap.
My only complaint is that I wished this had more of the lamb flavor in the spotlight, but overall this was a delightful and satisfying meal.
