Japanese savory steamed egg custard appetizer with orange zest on top and a piece of tako (octopus) inside. Extremely smooth texture and subtle flavor.

Apologies if this is causing anyone distress. Balut is a popular Filipino delicacy consisting of a fertilized duck embryo that's incubated for several weeks, then boiled or steamed and eaten from the shell. To eat it, you crack the rounded end, sip the flavorful broth, then peel and eat the yolk and the partially developed duckling inside, seasoning with salt or vinegar and hot sauce. Never had this as a teen, but now appreciate and even love it. High in protein but also on cholesterol though.

Kwek-kwek is a tempura-like Filipino street food consisting of hard-boiled quail eggs coated in a bright orange, deep-fried batter and served with a spicy vinegar dipping sauce. The vibrant color comes from annatto powder.
