This can often go wrong. Either the rice cakes are too hard and chewy, or they end up too soft and mushy. This one though was absolutely perfect. Stir-fried in a dark soy sauce, this dish reminded me of our KL-style hokkien mee but with rice cakes instead of noodles. Absolutely loved this.
