Bluefin tuna belly is wrapped in nori, battered in glutinous rice batter, then flash fried. Served with marinated vegetables, and edible flower. The edible flower was missing from some of our dishes so they took it away and came back decorated with it. LOL Such a stunning dish! Fatty melt in your mouth tuna turned chewy due to the glutinous batter was genius! I think I heard Sam say he preferred it raw, but I actually welcomed this chewy version of the dish! First time I had such and it was very interesting in a good way!! The picked vegetables and slightly bitter flowers cut the richness perfectly!
