Surprised by how much this dish impressed me. Buried under the goat cheese, toasted seeds and pine nuts, and all that sauce is a sweet plantain stuffed with more goat cheese, piquant peppers, and more pine nuts. Served on crispy kale and sweet sun-blushed tomatoes. So good!
