I used to order fried chicken & waffles with a side of collard greens. The bitter flavor adds 2 the sweet, salty, savory, umami foodgasm I have when I eat this. I didn't see any greens on the menu, but chef Taylor brought out this sauce & it brought the spicy/bitter vinegar taste 2 make my head pop off! Whew!
