Wild PNW salmon, marinated roof squash, cherry tomatoes, Israeli couscous; sumac vinaigrette with roof basil aioli. The salmon was rich, sweet & so tender! I loved the roof basil aioli, too. The tomatoes were sweet & popped when you took a bite. The couscous was done al dente, which I liked, but it was too spicy for me. I couldn’t finish it.
