Caramelized pork belly, kimchi apple, apple purée, and fried cilantro. I patted myself on the back for saving my stomach after becoming 90% full a few courses ago, cuz this dish was DA BOMB!!! I mean pork bellayyyyy!!! Come on!! On top of that the spicy kimchi’d (not sure if that’s a word?) apples tantalizingly fooled my stomach into feeling a little more “available” if you will. The spicy tangy apples cut the richness of the fatty belly and made this a heavenly dish. I only wish I had a bigger stomach so that I could’ve finished it!!
